Low GI Recipe - Lemon Grass Chicken

 

 

Wonderful Lemon Grass Chicken with wok fried vegetables

Ingredients:

18 lemon grass stalks

8 boneless, skinless chicken thighs

1 garlic clove

2 lime leaves

2 tablespoons soy sauce

1 teaspoon sesame oil

1 red bell pepper

1 green bell pepper, cored, seeded

12 oz. sugar snap peas

2 bok choy, quartered lengthwise

 

Place 16 of the lemon grass stalks in a bowl of water and let soak for 1 hour. 

 

Place the chicken, chopped lemon grass, garlic, lime leaves, and 1/2 the soy sauce in a food processor and process until well mixed.  Dived the mixture into 16 portions and mold each one around a piece of the soaked lemon grass. 

 

Place on an oiled cookie sheet, cook under a hot broiler for 4-5 minutes.  Turn as needed until golden and cooked through.

 

Heat the remaining oil in a wok or skillet, add the vegetables, stir fry for 2-3 minutes.  Add soy sauce.  Serve the stir fried vegetables with the chicken.
